Eggplant vegetable with mango pickle


  • Eggplant  (Baingan)                         1/2 kg
  • Green chili                                          4-6
  • Tomato                                                2 cut in pieces
  • Mango pickle                                     4 tbsp
  • Curry leaves                                       some leaves
  • Oil                                                           1/2 cup


  1. cut long pieces of eggplant and green chili tiny cut
  2. fry eggplant lightly in hot oil and out mango pickle and curry leaves then cap it & cook it on low flame.
  3. When water gets dry roast it for a while then serve it with green chili and coriander.
